Chicken + Pineapple

If you have boneless, skinless chicken breast halves and a fresh pineapple (or even canned pineapple), here are two easy meals you could make: Tropical Teriyaki Kabobs (210 calories per serving) or Sweet & Spicy Pineapple Chicken (262 calories per serving).

For the Tropical Teriyaki Kabobs, you'll also need:

  • 1 or 2 bell peppers
  • Low-sodium teriyaki sauce
  • Ginger powder
  • Garlic salt
  • 6 to 8" wooden skewers

For the Sweet & Spicy Pineapple Chicken, you'll also need:

  • 1 bell pepper
  • 1 small red onion
  • 1 hot pepper, such as a jalapeno
  • 1 or 2 cloves garlic
  • Extra-virgin olive oil
  • 1/2 cup low-sodium chicken broth
  • Fresh or dried parsley
