Stuffed Sloppy Joe Loaf

Makes 6 servings / 272 calories per serving2040917-1535957-thumbnail.jpg

1 lb. 93% lean ground turkey
1 small onion, chopped
1 (8 oz.) can tomato sauce
1/4 tsp. dried basil
1/4 tsp. dried oregano
1 (11 oz.) tube low-fat refrigerated crusty French loaf dough
1/4 C. shredded low-fat part-skim mozzarella cheese

Preheat oven to 350º. Line a baking sheet or 9x13" pan with parchment paper; set aside.

In a large non-stick skillet over medium heat, cook ground turkey and onion until tender; drain off any fat or liquid. Stir in tomato sauce, basil and oregano. Reduce heat to medium-low and simmer, uncovered, for 5 minutes.

Meanwhile, unroll French loaf dough into a flat rectangle on a lightly floured surface. Cut rectangle in half, lengthwise; flatten each piece into a long narrow rectangle, about 4x16". Place one rectangle on the parchment paper. Spoon the meat mixture in a line down the center of the dough; top with the cheese. Carefully place the second dough rectangle over the filling; press the edges together to seal well.

Bake the loaf for 25 to 30 minutes or until the bread is golden brown and the filling is heated through. Remove the loaf from the oven and let cool slightly before cutting into six slices.

This Stuffed Sloppy Joe Loaf is another recipe I adapted from a cookbook we recently compiled at my work called Rock Your Rolls. I "cut the cheese" by 75% and used ground turkey instead of ground beef. It was really good and made great left-overs!
