Garden of Eden Turkey Meatloaf

Makes 4 servings / 295 calories per serving

1 T. extra-virgin olive oil
1 red bell pepper, chopped
1 green bell pepper, chopped
1 sweet onion, chopped
6 fresh chives, chopped
Handful of chopped fresh parsley
1 tsp. dried marjoram
1 tsp. dried basil
1 tsp. dried thyme
1 lb. 93% lean ground turkey
1 apple, chopped
1/4 C. dry breadcrumbs
1 large egg

Preheat the oven to 400º. Heat the oil in a large nonstick skillet over medium-high heat. Add the bell peppers and onion; sauté until softened, about 6 minutes. Stir in the chives and parsley; continue to sauté until the parsley is wilted. Season with the spices and stir until mixed. Transfer the sautéed mixture to a bowl; set aside to cool for 10 minutes.


Add the ground turkey to the bowl with the sautéed mixture along with the apple, breadcrumbs and egg; mix by hand until well combined. Transfer the mixture to a 5×9" loaf pan sprayed with nonstick cooking spray; pat down lightly. Bake for 45 minutes, or until the internal temperature of the meatloaf registers at least 165º on a meat thermometer.

I named this "Garden of Eden" meatloaf mostly because of the apple it contains, but the name is also appropriate because it tastes so sinfully delicious. It's great for using up Things You Have On Hand!

This was really good, and a great "healthy" alternative to regular meatloaf, very filling with all the peppers! Mom and dad liked it too - probably because they didn't have to cook!
