Chicken with Orange-Avocado Salsa

Makes 4 servings / 274 calories per serving 

4 boneless, skinless chicken breast halves
Salt and pepper to taste
1 avocado, diced
1 orange, peeled, segmented, and chopped
1/4 C. minced red onion
Juice of 1 lime
1 Tbsp. honey
1 tsp. dried cilantro or 1 Tbsp. chopped fresh cilantro

Season chicken with salt and pepper to taste. Ask your husband (or roommate or dog) to sauté the chicken over medium-high heat while you prepare the salsa. Make sure he cooks the chicken until no longer pink on the inside. 

In a medium bowl, combine avocado, orange pieces, red onion, lime juice, honey, and cilantro; toss until evenly mixed. Season salsa with salt and pepper to taste.

Place one chicken breast half on each plate. Divide salsa among plates. Enjoy!

This is one of those recipes that has become a weeknight fallback because it's delicious every time. I've made it so many times that I don't even remember where it came from. Make it now while oranges are still in season and avocados are cheap.
