Banh Mi Spring Rolls

Makes 4 spring rolls / 255 calories per spring roll

For the Dressing-
3 Tbsp. mayonnaise
2 Tbsp. rice vinegar
1 Tbsp. chili garlic sauce
Juice of 1/2 a lime
1 tsp. sugar

For the Rolls-
6 oz. ground turkey breast
1/2 cup thinly slice shiitake mushrooms
1 Tbsp. canola oil
3 Tbsp. minced fresh ginger
2 Tbsp. minced scallions
1 Tbsp. minced fresh garlic
2 oz. thinly sliced delic ham, cut into strips
1/2 cup shredded carrot
1/2 cup shredded romained lettuce
1/4 cup matchstick-cut cucumber
2 Tbsp. minced fresh cilantro
2 Tbsp. minced fresh mint
4 spring roll wrappers (8-inch)

Whisk together mayonnaise, vinegar, chili garlic sauce, lime juice, and sugar for the dressing in a small bowl; set aside. 

Brown turkey and mushrooms in oil in a nonstick skillet over medium heat until turkey is cooked through, about 5 minutes, breaking up meat with a spoon. Add ginger, scallions, and garlic; stir-fry 1 minute.

Toss turkey mixture, ham, carrot, lettuce, cucumber, cilantro, and mint with the dressing.

Soften wrappers one at a time in hot water until pliable, about 30 seconds; pat dry. Place 1/2 cup of the turkey mixture in the center of each wrapper; roll like burritos and slice into about 8 pieces; serve with Wasabi Dip.

For the Wasabi Dip-
1/2 cup mayonnaise
1/4 cup 2% Greek-style yogurt
2 Tbsp. wasabi paste
2 Tbsp. fresh lime juice
2 tsp. minced garlic
2 tsp. toasted sesame oil
Toasted sesame seeds (optional)

Whisk together mayonnaise, yogurt, wasabi paste, lime juice, garlic, and oil in a small bowl until well blended.

Garnish dip with seasame seeds. Serve with Banh Mi Spring Rolls and fresh carrot sticks or bell pepper strips for dipping.

Our eyes were bigger than our stomachs when we decided to make this recipe from Fresh & Fabulous, the last product of my sweat and tears as health editor for Cuisine at Home magazine (p.s. it's a great book!). Mr. Shafer and I doubled the recipe and made 8 spring rolls, but we couldn't even come close to eating that much. Just one roll is quite filling!
If you're not familiar with spring roll wrappers, they come dried and just need to be soaked in warm water until they're pliable - no cooking required. And don't skip the Wasabi Dip - it's so flavorful, and the leftovers make a great dip for veggies!
